Almond Fruit Float
This light, cool dessert makes a refreshing treat on a hot day.
– 1 envelope unflavored gelatin
– 1 c. water
– ½ c. sugar
– ½ c. milk
– 1 tbsp. almond extract
– 1 13-oz. can fruit with syrup, or 1–2 c. fresh fruit, cut into pieces*
* Any kind of fruit, fresh or canned, may be used in this recipe. Mandarin oranges, sliced peaches, fruit cocktail, and pineapple all make delicious floats.
In a saucepan, dissolve gelatin in water. Place over high heat and bring to a boil. Then reduce heat to low.
Add sugar and stir until thoroughly dissolved. Stir in milk and almond extract. Mix well.
Pour into a deep, square pan and allow to cool to room temperature. Then put in refrigerator to chill.
When cool, cut into cubes and serve topped with fruit and syrup. If there is not enough syrup with the fruit, make a syrup by mixing 1 c. of water with 3 tbsp. sugar and ¼ tsp. almond extract and heating until sugar dissolves.
