Beet Patties/Rødbetekarbonader
These patties are a vegetarian alternative to meatcakes. Make some of each to please both your meat-eating and vegetarian friends!


        3 to 4 large beets

        1½ tsp. salt

        3 large potatoes

        2 stalks of celery, chopped

        2 eggs

        2 tbsp. dried bread crumbs

        ¼ tsp. pepper

        1 tbsp. butter or oil for frying.


Step 1:
Place beets in a pan of cold, salted water. (The water should just cover beets.) Bring to a boil and cook until tender (a fork should go into the beets easily). Next, boil potatoes until tender, and boil celery until tender. (You can use three pots and cook all vegetables separately at the same time, or use one pot and boil them separately in turn.) When all the vegetables are cooked, peel and mash the beets and potatoes and mix them together with the celery.

Step 2:
In a large mixing bowl, beat eggs and mix them with bread crumbs. Let mixture stand and swell a little before adding the vegetables. Mix all together well. Season with salt and pepper.

Step 3:
Heat butter or oil in a frying pan. Use a large spoon or your hand to form the vegetable mixture into flat patties and place them in the pan. Brown patties on both sides.
