Gingerbread Cookies/Pepperkaker
These gingerbread men and women can be hung on the Christmas tree, if you can resist eating them.
Ingredients
– 1 c. butter; 2 c. sugar
– ½ c. molasses; 2 eggs
– 3 tbsp. vinegar; 4½ c. flour
– 3 tsp. baking soda; 1 tsp. baking powder
– ½ tsp. white pepper; 1 tsp. ginger
Instructions
Step 1:
Preheat oven to 375°F.
Step 2:
In a large mixing bowl, cream together butter and sugar until light and fluffy.
Step 3:
Add molasses, eggs, and vinegar and mix well.
Step 4:
In a separate bowl, blend flour, baking soda, baking powder, white pepper, ginger, and cinnamon.
Step 5:
Add flour mixture to the butter and sugar, stirring until well mixed.
Step 6:
Turn dough onto a well-floured board. Using a floured rolling pin, roll out dough thinly. Cut into desired shapes with cookie cutters. (If you don’t have cookie cutters, you can use a glass to make circles.) Using a spatula, transfer cookies to ungreased cookie sheets.
