This might be my favorite recipe, because it’s easy and has the flavors and textures I love—tangy crunch from apples and salty cheesiness from the gorgonzola. I created this while getting ready for a BBQ and was feeling bored with my usual potato salad. My buddy Mark will argue it’s not as good as his potato salad, which he mixes with equal parts mayo and arm hair, but you’ll have to judge for yourself!
– 2 potatoes, skin on.
– 1 Granny Smith apple.
– ¼ cup (12 g) chopped scallion.
– ½ cup (68 g) crumbled gorgonzola cheese.
– ¼ cup (55 ml) mayo.
– 1 tsp (5 g) salt.
– 1 tsp (2 g) cracked black pepper.
Step 2: While your potatoes nuke, cut the apple into pieces about half the size of bite size. Transfer to a medium-size bowl and add the scallion, cheese, mayo, salt and pepper.
Step 3: When your potatoes are ready, carefully cut them into little pieces. Even with a decent knife, you’ll end up mashing them as much as cutting them— that’s OK. This potato salad is almost a mashed potatoes dish. Mix the potatoes into the bowl of goodies and eat immediately.
