Honey Cake/Piernik
Polish hosts and hostesses often offer a slice of this delicious dessert to lucky holiday guests.
Ingredients
– 8 tbsp. (1 stick) butter
– 4 eggs, separated
– 1½ c. honey
– 3 c. all-purpose flour
– ½ tsp. ground ginger
– ½ tsp. nutmeg
– ½ tsp. ground cloves
– 1 tsp. cinnamon
– 2 tsp. baking powder.
Instructions
1. Preheat oven to 350°F.
2. In a large mixing bowl, cream butter by beating until soft and smooth. Add egg yolks one at a time and beat well.
3. Add honey and mix well.
4. In a medium mixing bowl, sift together flour, ginger, nutmeg, cloves, cinnamon, and baking powder. Add to butter mixture and mix well.
5. In a medium mixing bowl, whip egg whites until stiff. Gradually and gently fold egg whites into batter mixture.
6. Pour batter into a buttered and floured loaf pan. Bake for about 1 hour. The top of the cake should be firm. To test doneness, insert a toothpick into the center of the cake. When the cake is done, the toothpick should come out clean.
7. Remove from oven, cool for 10 minutes, and remove from loaf pan. Finish cooling on a wire rack. Serve in slices.
