Lor mai kai – steamed chicken glutinous rice
Well seasoned and fragrant, this hearty snack of savoury glutinous rice and smooth chicken thigh is a favourite among dim sum lovers. Because it is filling, most people share a serving among a few persons so that they are not too full to enjoy other dim sum snacks.
Ingredients
– Glutinous rice 600 g (1 lb 52/5 oz)
– Water 400 ml (131/2 fl oz)
– Boneless chicken thigh 300 g (101/2 oz), cut into bite-size pieces
Seasoning
– Chicken powder 6 g (1/5 oz)
– Salt 6 g (1/5 oz)
– Sugar 30 g (1 oz)
– Oyster sauce 2 Tbsp
– Boiling water 300 ml (10 fl oz / 11/4 cups)
– Sesame oil a dash
– Cooking oil a dash
– Ground white pepper a dash
– Dark soy sauce a dash
Marinade
– Potato starch 6 g (1/5 oz)
– Chicken powder 3 g (1/10 oz)
– Salt 3 g (1/10 oz)
– Sugar 8 g (1/5 oz)
– Oyster sauce 1 tsp
– Sesame oil a dash
– Cooking oil a dash
– Ground white pepper a dash
– Dark soy sauce a dash
Instructions
Steam glutinous rice with water for 45 minutes. Stir in seasoning ingredients and mix evenly.
Step 2:
Coat chicken pieces evenly with marinade ingredients. Arrange marinated chicken pieces at the bottom of each aluminium case. Top with glutinous rice until each case is full.
Step 3:
Steam for 20 minutes over medium heat.
Step 4:
Serve immediately.
