Royal Mazurek/Mazurek Królewski
The traditional Easter table in a Polish home is laden with a variety of wonderful desserts.


        1 c. (2 sticks) butter or margarine, softened
        1¼ c. sugar; 1 c. finely ground almonds
        1 tsp. vanilla extract
        Grated rind of 1 orange, or about
        2 tbsp. dried grated orange peel
        5 egg whites
        1½ c. all-purpose flour.
        1 c. powdered sugar

        2 tsp. lemon juice.


1. Preheat oven to 350°F.

2. Grease and flour a medium cookie sheet.

3. In a large mixing bowl, combine butter and sugar and beat at high speed for 5 minutes. Add almonds, vanilla extract, and orange rind and mix well.

4. In a medium mixing bowl, beat egg whites until stiff. Gradually fold flour then egg whites into butter and sugar mixture and mix gently.

5. Spread over cookie sheet and bake for 40 minutes, or until golden brown.

6. While mazurek is cooling, prepare icing by combining powdered sugar and lemon juice. When mazurek is cool, spread icing over top. Cut into small squares and serve.
