Make your own restaurant-style sauce in just a few minutes.

Ingredients

Takes 15 minutes • Serves 2.

– 1 tbsp sunflower oil.

– 2 rump steaks (each about 200g/8oz).

– 140g/5oz mushrooms, quartered.

– 2 fresh thyme sprigs, leaves removed.

– 150ml/¼ pint red wine.

– 1 tbsp butter.

Instructions

Step 1:
Heat a non-stick frying pan. Rub half the oil all over the steaks, season them on both sides, then fry for 2–3 minutes each side for medium–rare, or cook to your liking. Remove from the pan, then set aside to rest.

Step 2:
Add the remaining oil to the pan, tip in the mushrooms and thyme leaves, then fry for a couple of minutes until softened and golden. Pour in the wine and bubble until reduced and syrupy, then turn off the heat and stir in the butter. Season to taste.

Step 3:
Serve the steaks with the mushroom sauce poured over.
