Skewered Lamb/Arní Souvlákia
Souvlákia kia is especially good when cooked the Greek way on an outdoor grill but is also delicious when broiled in the oven. You can vary this souvl kia recipe by alternating pieces of marinated meat with chunks of green pepper, onion, and tomato. Leg of lamb is best for kia, but you can also use beef or chicken. For a vegetarian dish, skip the meat altogether and marinate fresh vegetables instead.

        2 tbsp. olive oil
        3 tbsp. lemon juice
        1/2 tsp. salt
        1/8 tsp. pepper
        1/2 tsp. marjoram
2 lb. lamb, cut into 2-inch cubes

4. Place oven rack about 6 inches from top heat source. Turn on oven to broil.
