Vermicelli Soup/Sopa de Fideos
Fideos is the Spanish name for vermicelli, thin noodles often used in Italian cooking.


        2 tsp. vegetable oil

        ½ c. vermicelli noodles, uncooked and broken into small pieces

        ½ c. finely chopped onion

        3 tbsp. tomato purée

        2½15-oz. cans (about 5 c.) beef or vegetable broth

        ½ c. grated Monterey Jack cheeseor white cheddar cheese.


Step 1:
Heat oil in a skillet over medium heat. Add noodles, fry until light brown, then remove.

Step 2:
In the same oil, sauté onion until soft. Add tomato purée and cook for 2 to 3 minutes, stirring constantly.

Step 3:
Combine noodles, broth, and purée in a large pan and simmer until noodles are tender (6 to 8 minutes). Add salt and pepper to taste.

Step 4:
Sprinkle with cheese and serve.
