Waffle-battered chiken tenders

Chicken and waffles is made with bone-in chicken and is eaten with hot sauce, real maple syrup and thick butter. I love it! This dish is more “chicken tender” than it is “chicken and waffles,” but it’s much easier and has got the same flavor, if you’ve got the ambition. Melt a little butter and stir it into some tangy BBQ sauce, and you might be able to capture the magic!
Ingredients

– MAKES 4–6 TENDERS.
– ½ cup (62 g) all-purpose flour.
– 1 egg.
– ¾ cup (180 ml) milk.
– 2 tsp (7 g) baking powder.
– ½ tsp vanilla extract.
– 1 tsp (4 g) sugar.
– 2 cups (475 ml) canola oil.
– 8 oz (230 g) chicken tenders.
– 1 tbsp (15 g) butter (optional).
– 2 tbsp (30 ml) BBQ sauce (optional).
– Honey mustard sauce (optional).

Instructions

Step 1: In a medium-size bowl, mix the flour, egg, milk, baking powder, vanilla and sugar with a fork and continue mixing the batter until there are no lumps in it.
Step 2: Heat the oil in a large frying pan over medium-high heat. After 4 to 5 minutes, test the oil by putting a few drops of batter in to see if it fries. Put all of the tenders into the batter and coat them completely. Drop them into the oil and fry for 2 to 3 minutes per side, or until golden brown and cooked through. Your chicken is ready! Melt the butter and mix it with the BBQ sauce for an awesome dip, or stick with some honey mustard.
